Main Course Recipes
Most pioneer main dishes were stodgy, hearty fare, with no thought to calorie count or cholesterol. Pioneers worked at hard physical labor from sunup to sundown, and their diets needed to be full of calories to keep their energy levels adequate to match their workload.
Today, having an occasional stodgy meal is okay, so long as we generally maintain a healthy, well-balanced diet. At least that is what I am telling myself!
